The gum karaya by Alland & Robert is a gum exudation that is a non-starch polysaccharide, vegetal and 100 percent natural. The ingredient is suitable for the food industry and the functional additive can be used as a bulking agent, emulsifier, texturing agent, stabiliser, thickener in flavours, ice creams, ready-to-eat sauces and other food products.

The natural gum has a high viscosity at a very low concentration (significant effect on textures for concentrations below 0.3 percent) and is stable at a low PH, making it suitable for sauces and salad dressings. The ingredient also has freezingthawing stability which makes it suitable for the formulation of chilled ready-to-eat meals warmed up by microwaves. Its high soluble fibre allows it to be used in dietary food.
