Sodium Reduction: What Seasoning Solutions Mean for Food R&D

Reducing sodium in processed foods is becoming a more complex formulation challenge for food R&D teams, as manufacturers seek to lower salt levels while preserving the taste, texture and functionality consumers expect.
Future Market Insights estimates the global sodium reduction and salt replacement ingredients market at US$1.7 billion in 2026, with the market projected to reach US$3.6 billion by 2036. Mineral salts, including potassium chloride, represent a major part of the market, alongside approaches such as yeast extracts and umami ingredients.
For product developers, however, reducing sodium is not simply a matter of replacing sodium chloride at a one-to-one ratio. Salt contributes to flavour perception as well as functions such as texture development, fermentation and preservation. Removing or reducing it can therefore alter multiple characteristics of a formulation.
Potassium chloride is one widely used option, but higher replacement levels can introduce bitter or metallic notes. This creates opportunities for R&D teams to investigate combinations of potassium salts, yeast extracts, umami ingredients and flavour modulators to rebuild flavour perception while reducing sodium.
The approach may also need to vary by application. In savoury snacks, sauces and soups, for example, developers can explore seasoning systems that improve flavour intensity and salt perception. Bakery and meat applications can present different technical considerations because salt also contributes to dough behaviour, processing and product structure.
For ASEAN food manufacturers, these formulation challenges are particularly relevant as sodium-reduction efforts expand across processed foods and everyday packaged products.
Rather than treating salt reduction as a simple ingredient swap, R&D teams will need to evaluate replacement systems through application testing, sensory analysis and reformulation trials to determine the right balance between sodium reduction and product performance.
